Did you know that you can use the juice of red cabbage, a type of cabbage called red or purple cabbage, as a pH indicator? Its dark red, purple and burgundy leaves change color according to the pH value in the soil. If the soil in which it grows is acidic, the red leaves turn purple in soils with a more neutral pH, while in alkaline soils they turn greenish-yellow.
